The whatever... 5min meal idea
It was one of those evening, we needed diner quick and there was not much in the fridge... That's how I came up with this "veggie Thai laksa soup". Using some all time pantry classics and whatever vegetables I had in the fridge. I took the fast Asian noodle soup road and it was good...
Directions:
Heat up some vegetable oil in a large saucepan over high heat. Add curry paste and stir fry for 30 seconds. Add vegetables, grated ginger, finely shopped chili... Stir fry 2min. Add soya sauce. Add bouillon and coconut milk. Simmer and add noodles. Ready. Serve with lime and top with fresh coriander or what's available... Bon appetit!
I don't measure, I just poor and mix, hoping for the best taste... that's my kind of cooking here!
Ingredients:
1tbs Thai curry sauce / paste
Soya sauce
Coconut cream / milk in can
1 Bouillon cube / veg or chicken
Pack of instant noodle
Vegetables finely slice in stick shape (asparagus, 1 courgette, 1 paprika,...)
I had ginger and red chili - not a must but nice
Whatever green leaves you have... coriander, basil, ...
