Sparkling Raspberry Mint Lemonade
Today, I experimented, mixing up a summer drink to serve this weekend when friends come visit. I need something refreshing and that would work for the children and could be twisted to satisfied some grown up taste as well.
I am happy with this Sparkling Raspberry Mint Lemonade, it's fresh, tasty and sweet enough for kids to enjoy. I am also sure, it will taste nice with a dash of Tequila for the grown ups - cheeky me!
It's easy to make and can be prepared hours before. Use fresh ingredients, sweet raspberries and fragrant mint. Smash or purée the raspberries and mixed it with the lemon juice, mint and honey. You can use immediately or keep refrigerated. When ready, scoop the mixture (half of the glass) and top with ice and sparkling water. I am happy to be using sparkling water from our Zip Hydrotap (read more here), so convenient.
Sparkling Raspberry Mint Lemonade
Ingredients:
1 cup of raspberries
1 cup of raw honey (less to taste)
1 cup of lemon juice (slice for garnish)
1 later of sparkling water
Fresh mint (extra for garnish)
Directions:
In a bowl smash the raspberries with a fork.
Add honey, lemon juice, cut mint.
For each serving, scoop half a cup of raspberry mixture in a glass. Add ice. Add sparkling mineral water. Add mint and lemon to decorate.
It might be slightly different each time, I am still experimenting but I guess you make it to taste.
